Step-by-Step Instructions for Vegan Pumpkin Bread
with Chocolate Chips

Pumpkin
is a nutrient-dense food, even canned pumpkin. it is low in calories and fat, yet high in vitamins and minerals. Pumpkin can be used year round to make fantastic pumpkin bread that can be eaten everyday for a flavorful and nutrition snack. Pumpkin is a complex carbohydrate high in fiber, Vitamin A, Vitamin C, calcium and Iron.

My Vegan Pumpkin Bread has zero cholesterol and is high in poly-unsaturated and mono-unsaturated fats. Fats that are healthy for you! It also contains no refined sugar, no eggs, and no dairy. You will not believe the amazing flavor and taste of this delicious bread unless you bake it yourself! In this recipe, I add chocolate chips for a fun flavor, but if you are very health conscious you can add a 1/2 cup of raw walnuts or leave it plain and it will still taste great!

Most products in this recipe can be found at Trader Joe's in Pleasanton and Livermore. I love Trader Joe's because of the low cost, high quality organic ingredients.

1 1/4 cup Organic Pumpkin Puree (for Banana Bread substitute Pumpkin for 4 small or 3 large ripe bananas and remove pumpkin pie spice)
1/2 cup Canola Oil
1/2 cup Grade A Maple Syrup
1 tsp Pure Vanilla Extract
1 tsp Salt
1/2 tsp Pumpkin Pie Spice
1 1/2 tsp Baking Soda
1 3/4 cup Bread Flour or All Purpose Unbleached Flour
1/2 cup Semi-Sweet Chocolate Chips or Walnuts (optional)
Cooking and Preparation Time: Approx. 1 hour  

STEP 1
:
Preheat oven to 350 degrees. Add pumpkin puree, canola oil, maple syrup, vanilla extract, salt, pumpkin pie spice, and baking soda to a large bowl.

Mix ingredients together with a spoon until smooth.

STEP 2: Add 1 cup of flour to the pumpkin mixture and gently mix in flour.

STEP 3:  Add an additional 3/4 cup of flour and gently mix in flour.

Batter should be a thick consistency but be more moist than a bread dough.

STEP 4Add Chocolate Chips or Walnuts and gently mix into batter.

STEP 5: Press batter into 8 inch loaf pan and bake at 350 degrees for 45 - 55 minutes until cake tester comes out clean.

Enjoy a slice with your favorite tea, coffee or non-dairy beverage.
